Waimata Mozzarella Balls

A new product for the cheese makers at Waimata this a fun cheese to make if you don’t mind handling 70 degree curd. We stretch and form the balls by hand to ensure we get the internal texture just right and a nice smooth skin on the mozzarella balls. We currently make on a Friday and sell at our local farmers market Saturday morning to ensure a wonderful fresh cheese experience. Great in salads with tomato and basil, or melted on pizzas or bruschetta as it ages. With a slightly innocuous flavor, look for that sour cream twang and those subtle rich creamy notes.
